2 post in a day…….but i had to share this with you all as this was the 1st time i was baking muffins and was so very very happy that i at last made muffins at home. I have wanted to bake them from a long time but i dint have a muffin tray available here, so some days back I laid my hands on the individual aluminium muffins molds, and was so happy to buy them. I have had muffins at cafe coffee day and love their chocolate muffins which contains the right amount of sugar and not too overly sweet.
This is a site I came across when i was looking for the meaning of muffins and how they are different from cake and the site has a variety of muffins recipes as well. Do hop over there to have a look. I wanted to prepare chocolate muffins only and had a recipe shared by my neighbor long back. but the recipe she had shared contained eggs so i made some changes to it to prepare a eggless one and oh boy I was so happy with the final outcome of the muffin. The muffins were moist and tender and were yumilicious.
Here goes the recipe do try it out…..
Chocolate Muffins
Ingredients
11/2 cup All purpose flour
1 tsp Baking Powder
1/4 tsp Baking soda
3 Tbsp Cocoa Powder
4 Tbsp Brown Sugar
60 gms Butter
1/2 cup milk + 2 tbsp
11/2 tsp vinegar
1/2 cup Shredded Dark chocolate.
Method
Grease the muffin molds and preheat oven at 180c for 10 mins
Sieve flour , baking powder, baking soda and cocoa powder in a bowl
Melt butter in a pan , add milk and more than 1/4 cup chocolate and brown sugar.
whisk nicely till the chocolate has completely melted, and when cooled add vinegar.
Mix the dry Ingredients to it and fold gently. now add the remaining chocolate and fold again.
Do not over mix this and this wont be like a regular cake batter. If u find some light traces of dry flour it is ok i guess.
U cant pour the batter into the moulds as the batter is very thick so spoon it into the muffin moulds with the help of a big spoon
Bake the muffins for 25 mins at 180c, you can also insert a toothpick at this stage and see that it comes out clean.
Serve warm and they will taste delicious.
They turned out to be moist and buttery.
Note
The originally recipe had called for 1 egg but i replaced it with 1/4 tsp soda and 11/2 tsp vinegar and 2 tbsp extra milk.
If u have chocolate chips on hand u can add them instead of the shredded dark chocolate.
You can make 6 muffins with them.
I spooned very little batter in the moulds , next time I will fill them till more than half .
The muffins may not like they have risen nicely, but that was due to the small qty of batter in the molds.
I was very happy with result and recipe is a keeper for sure, maybe i should try the same recipe to make a chocolate loaf cake………
I love that they are eggless. I wish I could bake chocolate muffins as often as I want but none at home are enthu about chocolate 😦
