Pasta/Pizza Sauce

This sauce is so easy and you can use it so many ways. Make in this when tomatoes are in abundance and you can store it in the fridge for a fortnite or freeze it for longer duration.
Blanch 1 kg tomatoes, peel and puree them. Chop 2 onions and 4 garlic cloves finely.
Heat oil in a pan, add some chilli flakes and some pasta seasoning. Add onion and garlic and saute for a couple of mins.
Add the tomatoes, salt, pepper,  little sugar ,a big spoon of tomato sauce.
Mix and let it cook for 10 to 15 mins covered.
Once all the water has been reduced store it in a bottle.

Tomato Onion Chutney

This chutney I had prepared sometime back to accompany dosa’s along with the coconut chutney i usually prepare. I prepare a lot of different type of dosas at home, so I always try to prepare different chutney to pair with it. This has a lovely tang taste to it coz of the tomatoes and has  a lovely flavour as well. Do try this version as it and it surely will be a regular feature in your menu.

Tomato Onion Chutney

Ingredients

Onion 1

Tomatoes 2

R.chillies 4

Chana Dal 1 tbsp

Coconut Grated 2 tbsp

Oil 2 tsp

Salt to taste

For Tempering

Oil 1 tsp

Mustard Seeds 1 tsp

Urad Dal 1 tsp

Curry leaves 5 leaves

Dry Red Chilli 1

Method

Chop Onion and Tomatoes into big pieces.

Heat oil in a pan, Add chana dal and saute till light brown, then add red chillies and fry them till it turns a bit dark in color.

Set aside.

In the same pan, add the onions and tomatoes and saute them nicely till the tomatoes turns soft.

Cool and blend to a paste along with the chana dal, r.chillies, grated coconut and salt.

Add little spoonfuls of water to get into a smoother consistency.

Transfer to a serving bowl.

Prepare the tempering with the ingredients mentioned and pour over the chutney.

Serve with Idli or Dosa of your choice.

Tomato Soup

I love soups and paired with a light sandwich ar a simple toasted bread can make it a complete meal. Tomato Soup is something which was always ordered in our visits to restaurant, it is only from past some years that we have a array of soups of available. My personal fav is Hot And Sour and will post the recipe for that as well very soon. This is a very easy and simple preparation and you can make it to suite your taste. For a more profound color add some cubes of beetroot and it will give you a darker color. This is also a fat free one as i have not added any butter or added flour to thicken it. 

Tomato Soup

Ingredients

Ripe Red Tomatoes 5

Onion 1

Split yellow moong dal 2 tbsp

Salt 

Pepper 1 tsp

Sugar 1 tsp if reqd.

Water 1/4 cup

Milk 1/4 cup

Method

Chop tomatoes and onion into big chunks.

Place them in a cooker along with the dal and water and pressure cook for 3 whistles.

Let cool and blend the mixture into a puree.

Strain the mixture to get a smooth puree  (You can skip this step as well , but i like a smoother consistency)

Transfer to a pan and add salt, pepper and milk and simmer till it gets to a boil.

Taste the soup and if you feel there is a  tartness of the tomatoes add the sugar.

Serve hot.

I also add carrots or beetroots sometime while cooking it.

You can also add a single star anise to get a different flavor.
