Pizza

A favorite at our place.

Ingredients

3 cups maida
1tbsp yeast
2tsp salt
1tsp sugar
1cup warm water.

Make a dough of all the ingredients and knead nicely, I do it in a food processor so it is very easy.
Place it in a oiled bowl and rest for a hour.
You can make around 6 smallish pizzas with this.
After the dough has risen, make 6 balls and flatten each and roll them. Keep pressing the edges simultaneously.
Place this on a pizza pan, spread pizza sauce,veggies of your choice and lots of mozzarella cheese. Sprinkle some salt and herbs as well
Bake it in a 200c preheated oven for 15 mins.
For a cheese burst version, spread a layer of cheese spread on the base and then spread pizza sauce.

Basil Pesto

I have been planning to make this from such a long time and then I made it atlast yesterday. It came out good and I can use it so many different recipes.
In a blender add 2 garlic cloves, 4 to 5 peices of walnuts , 250 gms basil, salt, juice of half a lemon and 2 tbsp cheese grated. Start blending it and add around 2 to 3 tbsp of olive oil and blend till smooth.
Store it in a bottle and just add some tbsp of olive oil on top if it.
U can ise this in pasta, sandwich,  pizza, as a dip……

Pasta/Pizza Sauce

This sauce is so easy and you can use it so many ways. Make in this when tomatoes are in abundance and you can store it in the fridge for a fortnite or freeze it for longer duration.
Blanch 1 kg tomatoes, peel and puree them. Chop 2 onions and 4 garlic cloves finely.
Heat oil in a pan, add some chilli flakes and some pasta seasoning. Add onion and garlic and saute for a couple of mins.
Add the tomatoes, salt, pepper,  little sugar ,a big spoon of tomato sauce.
Mix and let it cook for 10 to 15 mins covered.
Once all the water has been reduced store it in a bottle.

Penne Pasta In A Creamy White Sauce!

R u among those who love their white sauce, I for one don’t belong to that group, I love my pastas in a tomato sauce in a spicier version. This one is for my daughter who loves cheese and pasta. So for the Cheese lovers guys do try this out….most of you will be already familiar with this classic dish but here goes the recipe for the newbies.

Penne Pasta In White Sauce.

Ingredients

1 tbsp butter + 1/2 tsp butter

1 tbsp Cornflour

11/2 cup milk

1/2 cup Del Monte Penne Pasta

Salt to taste

Crushed pepper 1/2 tsp

Italian  Seasoning 1 tsp

Cheddar Cheese 2 Slices

American Corn 4 tbsp

Capsicum 1 small chopped

White Sauce In Making

Method

Cook Pasta as per instructions given on the pack , Boil loads of water in a pan, add the pasta and 1 tsp oil and cook till al-dent.

Prepare white sauce while the pasta is cooking.

Heat 1/2 tsp butter in a pan, add corn and capsicum and saute for a minute. Transfer to a  bowl.

Heat the remaining butter in a pan , add cornflour and stir continuously till u feel that it is cooked.

While stirring continuously add milk slowly and whisk nicely so that no lumps are formed.

let cook till it comes to a boil.

Add Salt, pepper and the Italian seasoning and the cheese slice as well.

Add the corn and capsicum at stage.

Add the cooked pasta and mix everything nicely.

Cook again for 3-4 mins so that the flavours of the sauce is imbibed by the pasta.

Serve Hot!

Pinks Note.

You can replace the penne with any variety of pasta.

Italian seasoning is a mix of different herbs which contain oregano n Chilli flakes.

I have used Cheddar Cheese, but u can also try a combo of 2 or 3 different types of cheese as well.

You can also bake this mixture, i had tried it once but my kiddo dint like it much so I don’t do it.

To Prepare baked version , once the Pasta is cooked in the white sauce, transfer the mixture to a baking pan and sprinkle cheese all over the top. Bake it for 15 mins at 180c.

I personally felt that it had become to dry. Do try this out as well.
