Chocolate Cake Bombs

These are a yummy and is a big hit with kids.

Choco cake bombs

Ingredients
3/4 cup maida
2 tbsp cocoa
2 tbsp oil
1/4 cup sugar  ( powdered sugar)
1/4 cup yogurt
1/2 cup water
Pinch of salt
1/2 tsp baking powder
1/4 tsp baking soda
1-2 drops of lemon juice
1/4 tsp vanilla

Method.
Mix curds and water nicely and add oil and vanilla.
Sieve all the dry ingredients in a bowl and add it to the wet ingredients.
Add lemon juice and mix lightly.
Heat a appe pan and grease it.
Pour a spoonful of batter, cover with a lid  and cook for a min.
Turn them around and cook the other side as well.
Ready to be eaten .
I drizzled it with chocolate syrup.
You can also insert choco chips or Choco ganache in the center for a gooey center,for that pour half spoon batter then place the chips or ganache and cover it with more batter.

Chocolate Hearts

These come with a surprise punch in it and serve them to your guest and watch their expressions…..I added some salt and chilli powder to the melted chocolate and who ever tasted it was in for a surprise. The chilli kicks in at the last in the throat and loved these mini hearts. There is a no recipe as such but here goes.

Ingredients

Dark Chocolate 200gms

1/2 tsp Chilli powder

1/8 tsp Salt

Method

Melt Chocolate in a double boiler and add Chilli Powder and salt and stir gently.

Pour them into heart shaped moulds and tap the moulds nicely so that there are no air bubbles.

Set in the fridge for half hour.

Tap them lightly and remove the hearts.

A heart for a person you love.

Chocolate Loaf Cake

A simple chocolate loaf cake which is so rich in taste and is a treat for all the chocolate lovers. All the chocolate lovers do try this as it is a simple bake and comes out great as well.

Ingredients

Butter 1/2 cup

Sugar 1 1/2 cup

Flax Meal 1 Tbsp mixed in 1 tbsp water

 Buttermilk 1 cup

 Vanilla Extract 1 tsp

All purpose Flour- 1 1/2 cup

cocoa powder- 3/4 cup

Baking soda- 1/4 tsp

Baking powder- 1/2 tsp

Method:

Preheat oven at 180 c

Grease a loaf pan and set aside.

In a large  bowl, cream the butter and sugar until creamy, Add Flax meal and beat well.

Mix vanilla and buttermilk. Beat well to mix 

Sift the flour,cocoa,soda,baking powder and salt directly into this wet mixture.

Stir everything together nicely.

Pour this batter into the loaf pan and bake for about 50 minutes at 180c or insert a tooth pick and check whether done.

Rest for some time and remove from the tin.

Serve warm .

Pinks Notes:

The loaf cake was a bit too sweet for my taste so next time , i will reduce it to 1 1/4 cup or less.

A drizzle of Chocolate sauce or Nutella will be a great accompaniment to this.

Coffee And Chocolate Pudding

How do u feel when you prepare something new and love the result……how do you feel when u put your feet on uncharted territories,How do you react when a unknown challenge is thrown at you,…………. For me it is exhilarating to do something new, to learn something new. I love baking and love to experiment different recipes, but my comfort factor is baking simple cakes and some basic breads as well cookies, As soon as the Icing word pops out, i have cold feet as i am not very good at it, why am i not good at it is coz i have not tried many as well.

The recipe for this month is Coffe and Chocolate Pudding and this is the 1st time i have made this. The pudding came out very nicely and a best treat for a cold day. It is best had when warm with a scoop of ice cream. The recipes calls for eggs which i dont use so made some changes on that part

 

Coffee and Chocolate Pudding

                          Maida 1 cup                           

2 tsp baking powder

2 tsp cocoa

Pinch salt

½ cup brown sugar

2 tbsp butter, melted

½ cup milk

1/2 tsp Soda

2 tbsp curds

For the topping

6 tbsp brown sugar
3 tbsp cocoa
1/2 cup strong black coffee

Method

Preheat oven to 180°C.

Grease 4 cupcake molds or 4 ramekins.

 Sift together dry ingredients togeather in a bowl

Mix butter, milk, Curds  until well combined.

Spoon batter into 4 muffin molds

Sprinkle  brown sugar and cocoa then pour over coffee but do not stir.

Bake for 15 mins at 180c

Serve hot or warm with a dollop of ice cream.

Note.

As told best had warm, due to the addition of hot water on the top the batter gets cooked on the top but there is a sauce on the top which seeps through the whole pudding.

Chocolate Cake……..My 3rd Chocolate Cake Recipe

Who can resist a good slice of chocolate cake……….i at least cant and when in the blog world you come across so many different types of cake recipes that i always get tempted to make one……..It was sisters b’day yesterday and so a good reason to bake a chocolate cake. The cake was very delicious and loved the texture of it. It was soft and full of chocolate. Totally Loved it !!!! :0

Chocolate Cake

Ingredients

Maida 1 cup

Cocoa 1/2 cup

Instant Coffee 1 tsp

Curds 1 cup

Sugar 3/4 cup

Baking Powder 1 1/4 tsp

Baking Soda 1/2 tsp

Vanilla Essense 1 tsp

Oil 1/2 cup

Chocolate Chips 1/4 cup

Method

Preheat oven at 180c

Grease and flour a cake tin and keep ready

Sieve maida,cocoa and coffee in a bowl. 

In a separate bowl mix curds and sugar and beat the mixture nicely till it is creamy and sugar is dissolved.

Add soda,baking powder and vanilla and give a mix and rest the mixture for 5 mins.

At this stage you will find the mixture has turned bubbly.

Add oil and give a nice mix again.

Add the sifted flour mixture and half of chocolate chips and whisk nicely till you have a smooth batter.

Pour the mixture into the greased tin , sprinkle the remaining chips on the top and bake in the pre-heated oven for 30 mins.

After 30 mins you can insert a toothpick in the center and check whether the cake is done.

If the toothpick comes out clean it is done or if it comes out with a bit batter then bake for another 5-10 

After 5 mins invert the cake on the rack and let cool for some time.

Note

U can replace the choclate chips with walnuts as divya has done, as i am not very fond of nuts i replaced it with chips.

The cake remains quiet soft and i think that is due to the addition of oil.

Best served warm with a dollop of ice cream and a dash of chocolate sauce on top.
