Paneer Capsicum Corn Sandwich

This is my favorite sandwich and it is one of the easiest one to make.

Chop 1 capsicum in to cubes, Boil a handful of corn. Chop some paneer into small cubes.

Mix all the above 3 with salt, pepper, chilli flakes.

Spread a big spoonful of this mixture on one side of the bread and place a cheese slice over it. Cover it with another bread and toast it in a toaster or griller.

The yummiest cheesiest sandwich is ready ūüôā

Stuffed Garlic Bread – Again Dominos Style

I have attempted Garlic Bread earlier and it is one of the most viewed recipe on this blog.      I love the simplicity of that bread and it so easy to put together. If you have never attempted making bread, give it one go you will be amazed with the results. Nothing beats the Aroma of bread being baked in the oven and really trust me you will be really hooked to it. This time i made the stuffed garlic one , and it came out great. I tried to make it a bit healthy by using half atta and half maida. The addition of atta does change the taste and texture of the bread a bit but it is good and for me it was a feeling of goodness as my daughter Sakshi loved bread and it gives me satisfaction in knowing that it is  homemade and a bit healthy as well. So here goes the recipe.

Stuffed Garlic Bread:

Ingredients

 For Garlic Bread

All purpose flour 3/4 cup

Atta – 3/4 cup

yeast 1/2 tsp

warm water 1/2 cup+ 3tbsp

Salt to taste

Grated garlic 5 cloves

Olive oil 3 tbsp

Italian Seasoning 2tbsp

Chilli Flakes 1 tsp

B.pepper 1/2 tsp

For Stuffing

1 small capsicum chopped

Paneer chopped in  smallcubes

Handful of boiled corn kernels

Mozarella Cheese

B.Pepper

Chilli flakes

Salt a big pinch.

Method

Prepare Garlic Bread

Heat water till warm and add yeast to it.

Let the yeast proof for 5 mins till you see a frothy mixture.

Add 3/4 cup atta to it and mix nicely with a laddle.

Rest this batter for 45 mins till it doubles.

Add the remaining flour,3 cloves garlic grated and salt and mix nicely.

At this stage i had to add couple of tbsp of water to get the dough together.

Knead it nicely and transfer to a floured counter space and knead the dough for the 8-10 mins till the dough is smooth and springy.

The dough will be a bit sticky so i had to spread some oil in my hands to get the dough together.

Let the dough double again which can take from 1 hr or more.

Preheat the oven at 200c

Transfer the dough  on floored counter space and roll it into a oval shape.

Mix all the ing. mentioned under stuffing except cheese and spread it on half of the dough. Cover it with grated cheese and fold the dough into a half. It will be like the half moon shape.

Brush lightly with oil and  and sprinkle the seasoning and spread the remaining grated garlic.

Transfer it to a baking sheet and bake in the preheated oven for 15 mins.

Slice then into strips and have hot with soup or a cheesy dip.

Have it fresh out of the oven.

Paneer Capsicum N Cheese Toast

For me breakfast is a very important meal of the day and i hate to have the same breakfast every day n week so i always try to prepare something different which is good in taste and which is liked by the 3 of us at home. This is a very easy sandwich toast recipe and a very fulfilling breakfast or snack as well. Do try this easy peasy wholesome breakfast.

Paneer Capsicum N Cheese Toast

Makes 4 toast

Ingredients

Bread Slices 8

Paneer Crumbled 1/2 cup

Onion 1 small thinly sliced

Capsicum 1 Finely Chopped

Amul Cheese Slice 2 cut into squares

Salt

pepper 1 tsp

Butter as reqd.

Method

In a bowl mix paneer , Onion,capsicum , cheese,  salt n pepper and mix.

Take a bread slice, spread the mixture evenly in generous quantity and cover it another bread slice.

Spread butter on both the sides and toast in a toaster till nicely crisped and brown.

You can do the same method on a tava as well, after applying the butter, place the bread on a hot tava and press nicely with a spatula and cook on both sides.

Have these hot with Tomato Ketchup!

Many add ons can be done to the basic toast, I sometimes spread some mint chutney on the base then then placed the filling.

Adding some finely chopped g.chillies will also give a nice spicy kick to these toast.

Remember the Creamy Curd Dip, i spread that on the base of the sandwich before the filling and then toasted it.

Cooking is all all about you, so cook according to your taste.

Penne Pasta In A Creamy White Sauce!

R u among those who love their white sauce, I for one don’t belong to that group, I love my pastas in a tomato sauce in a spicier version. This one is for my daughter who loves cheese and pasta. So for the Cheese lovers guys do try this out….most of you will be already familiar with this classic dish but here goes the recipe for the newbies.

Penne Pasta In White Sauce.

Ingredients

1 tbsp butter + 1/2 tsp butter

1 tbsp Cornflour

11/2 cup milk

1/2 cup Del Monte Penne Pasta

Salt to taste

Crushed pepper 1/2 tsp

Italian  Seasoning 1 tsp

Cheddar Cheese 2 Slices

American Corn 4 tbsp

Capsicum 1 small chopped

White Sauce In Making

Method

Cook Pasta as per instructions given on the pack , Boil loads of water in a pan, add the pasta and 1 tsp oil and cook till al-dent.

Prepare white sauce while the pasta is cooking.

Heat 1/2 tsp butter in a pan, add corn and capsicum and saute for a minute. Transfer to a  bowl.

Heat the remaining butter in a pan , add cornflour and stir continuously till u feel that it is cooked.

While stirring continuously add milk slowly and whisk nicely so that no lumps are formed.

let cook till it comes to a boil.

Add Salt, pepper and the Italian seasoning and the cheese slice as well.

Add the corn and capsicum at stage.

Add the cooked pasta and mix everything nicely.

Cook again for 3-4 mins so that the flavours of the sauce is imbibed by the pasta.

Serve Hot!

Pinks Note.

You can replace the penne with any variety of pasta.

Italian seasoning is a mix of different herbs which contain oregano n Chilli flakes.

I have used Cheddar Cheese, but u can also try a combo of 2 or 3 different types of cheese as well.

You can also bake this mixture, i had tried it once but my kiddo dint like it much so I don’t do it.

To Prepare baked version , once the Pasta is cooked in the white sauce, transfer the mixture to a baking pan and sprinkle cheese all over the top. Bake it for 15 mins at 180c.

I personally felt that it had become to dry. Do try this out as well.

Mini Cheesecake

I loved making this recipe ¬†and was so very happy doing it. I really appreciate people who are so open in trying out doing different recipes and Kavi’s blog Edible Entertainment¬†is one of them. I like that she has tried so many¬†different¬†types of recipes and i had a bit of time in deciding the one i would like to cook. Initially i had decided on making Onion Rings¬†but when she posted this recipe recently i was sure that this would be the one i would be making.

I have hardly tasted cheesecake earlier so it was a good thing that i made this.It tasted just so awesome and i am so very happy to make it. It tasted so delicious and i was so proud to present it to my family. Loved the crust and then the creamy layer on the top it was silky smooth and melt in the mouth texture. So lets rock to the recipe now,do really try this out coz it was yummy and yummy.

I have followed kavi’s recipes till the most part by making only some minor changes.

Mini Cheesecake

 Ingredients

Prepare Cream Cheese

500ml whole milk

1 tbsp curds

2 tbsp cream

Prepare Cheesecake

For Crust

100gm pack of Hide and Seek Bisuits

1 Tbsp Butter

For Jelly Filling

Weilkfeilds Jelly 100 gms pack

For  ceam Filling

Cream cheese

Amul cream 80gms

Powdered Sugar 1/2 cup

1/2 tsp vanilla essense

1 tbsp china grass

1 tbsp hot water

Garnish

Dark Chocolate

Method

Cream Cheese

Heat milk and when starts boiling add 1 tsp lemon juice and stir till the milk separates.

Rest for 5 mins and strain in a muslin cloth and wash it with fresh water,drain all the excess water and pulse it in a mixer along with the cream till u get a creamy consistency.

Yup Cream Cheese is ready.

Crust

Crush the biscuits either with a rolling pin or in a mixer along with 1 tbsp butter.

Press around 2 tbsp of it on the base of each serving glass.

Chilli for 30 mins and above.

Jelly Filling

Prepare jelly¬†according¬†to the instructions on the pack and pour ¬†1” or more above the crust and chilli it again for 30 mins or more for the jelly to set.

Cream Filling.

Mix Chinagrass in 1 tbsp hot water and stir till dissolved. Let cool

Beat cream cheese along with vanilla and sugar nicely.

Add cream and beat the mixture till it is smooth and fluffy.

Add china grass at this stage and whisk again.

Pour this mixture over the jelly and crust base and pour evenly.

Let it chilli in the fridge for more than 6-8 hrs.

Serve with grated dark chocolate.

This was the best dessert i have made till now………it was yummilicious.
