Blogging has been fun till now, My 1st post on the blog was a cake and the journey till now has been good. When i had started the blog i used to think that they are so many food blogs available out there, will somebody stop on my blog as well to have a peek, Thanx to everybody who took time out and visited my space. It is a good feeling when others drop by the blog…….To tell the truth i used to visit the stats page everyday to see how many views the blog has had and it was a slow start but happy to be here. My 1st post on the blog was a vanilla custard cake and so  to celebrate this occasion i present a chocolate cake to you all, it is a bit different from the regular cakes as butter or oil is not used in this,  i have  used malai for this recipe. Malai is the cream u get on top of the milk, and the cakes turns out good as well. So store tha malai and do try this cake out.

Baking Soda 1/4 Tsp

Vanilla essence – 1 tsp

Chocolate Chips

1. Mix malai, milk and sugar and blend till mixed nicely.

2. Pour it into a vessel and add vanilla essense and mix.

3. Sift the dry ingredients in a separate bowl and fold it into the milk and malai mixture.

This cake was prepared for a friend of mine i was visiting and hope that she liked it.

Chocolate Cake

Chocolate Cake with butter cream icing………phew i finally did it I  started baking cakes from quiet some time now but never tried  icing it. It always felt like a big task on hand so alwayz skipped it.

Chocolate cake and you get a smile on your face , everybody has their favorite method of making it but you cant resist when you come across a new recipe and try it out. I have tried numerous ways of baking chocolate cake, some with butter, some with oil , and also one with malai (I will share this recipe it is a really simple and a nice one which my sis had shared with me). Chocolate cake always brings back good memories, in our college days we always used to visit nilgiris for their Black Forest Cake and bread pizza.

This cake was baked for a special occasion, it is hubby’s bday  today and so did some icing on it as well. i have baked cakes only from the past 2 years so before that for every bday we used to get 2 pastry slices from the bakery with a single candle and used to celebrate it.

Happy Bday Pratap

The recipe  started out with was a Black Forest Cake recipe but as you can see , it is nowhere close to it. Here goes the recipe , it does look like a lot of ingredients but believe me that this cake comes out nice and buttery. I have alwayz prepared the same cake for any good occasion.

Chocolate Cake

All Purpose flour (Maida) 200gms

Butter 100gms

Sugar 160gms (Powdered)

Milk Powder 100gms ( I used Amulya Brand )

Baking Powder 2 Tsp

Baking Soda 1 Tsp

Vanilla Essense 1 Tsp

Curds 1/2 Cup

Milk 1/2 Cup

Cocoa Powder 4 Tbsp

Coke 1/2 Cup (I think Pepsi will also do)

Seive all the dry Ingredients in a bowl & mix nicely. (What i do is put all in a box with a lid and then shake the box nicelly)

Cream Butter and sugar till creamy. Add curds and milk powder and mix nicely.

Add milk , essense and mix again, now add coke and give a nice stir.

Add the dry ing and give a nice mix but you have to be quick in this.

Pour the batter in a greased baking tin and bake at 180 c for 35 mins.

Insert a toothpick in the center of the cake and if it comes out clean you cake is baked. Let cool down for 5 mins and then invert it on the wire rack & let cool

Now for the icing part.

I let the cake cool for 3 hrs and then slice it in the centre so that u have 2 halves.

Make a sugar syrup of 5 tbsp sugar and 4 tbsp water. cook till sugar melts & let cool.

Place the bottom layer on a tray and pour spoonfuls of sugar on the 1 st layer.

I used Pilsbury choclate icing and vanilla icing for this.

Take a spoonful of the choclate icing and spread it evenly on the 1st layer .Then sprinkle cherries and top it off with grated dark choclate.

Now place the 2nd layer and add little sugar syrup on the top evenly.

Spread the chocolate icing on the top of the cake and on all the sides evenly.

I decorated the top of the cake with vanilla icing.

A very long post, but was very happy with the end result.

Happy Bday Pratap………..

Eggless Custard Powder Cake

I have always luved cakes and then preparing one at home long back, it was great to eat it coz that was the 1st time i had baked a cake at home. it was a chocolate cake from Tarla Dalal.

The cake today i am going to share with you all is Eggless Custard Powder Cake which i found on  Aparna’s Blog. I have made some changes in the recipe so here goes the recipe.

 Eggless Custard Powder Cake

Adapted from My Diverse Kitchen

3/4 cup all purpose flour

1/2 cup milk

1/4 cup+3tbsp sugar

1/4 cup vanilla custard powder

1tsp baking powder

A big pinch soda

1/2 tsp vanilla essense

50 gms butter

Heat milk and sugar add butter and mix it nicely so the butter and the sugar melts.Let cool

Once cooled add custard powder & beat nicely with a hand beater.

In a separate bowl sieve flour, soda and baking powder.

Add the dry flour mixture to the custard+ milk mix and mix nicely.

Pour the batter into a greased baking tin and bake at 170c for 35 mins.

You can check whether the cake is done when the toothpick inserted in the center of the cake comes out clean.Let cool for 5 mins

And then invert it on rack to cool for some more time.

I liked this cake best when it was warm fresh out of the oven. the next day it had become a bit more denser in texture.

Hope you all try this cake and like it.
