Chocolate Cupcake

Daughter wanted to have some cake so prepared these cupcakes which i had come upon this blog some days back. This recipe is surely a keeper, the cupcakes turned out to be soft and moist  and very light. Loved the cakes and will be preparing these in the days to come as well. Getting chocolate chips in Mysore was a hard thing, but finally found a supplier who stocks everything from dark chocolates to chips to chocolate vermicelli. so I add them to all my cakes and cookies now.

This is a very simple cake recipe which I have prepared in my muffin cups. It is just mixing your dry ingredients with wet ingredients and it also doesn’t use any butter.

Chocolate Cupcakes

Yields 10 Cupcakes

11/2 cup All purpose flour

1/2 cup sugar

1/3 cup sugar

1tsp soda

1/4 tsp salt

1/4 tsp baking Powder

1 tsp Instant coffee powder

1/4 cup chocolate chips

1 cup cold water

1/4 cup oil

1tsp vanilla extract

2 tbsp molasses

Preheat oven for 10 mins at 180c

Grease and flour your muffin cups

Sift flour, Powdered sugar, soda, baking powder, cocoa, salt and coffee. Mix nicely and add chocolate chips.

In a separate bowl mix water, oil and vanilla.

I have never heard of molasses earlier but after doing some Google search i substituted it with 2 tbsp brown sugar mixed nicely in 1 tbsp water till smooth.

Add the wet ingredients to the dry ingredients and mix nicely till a smooth batter is formed.

Pour the batter into your cups and bake it for 20 mins at 180c.

Cool on a wire rack and serve warm.

You can prepare this in a regular cake pan as well.

Serve warm with a dollop of vanilla ice cream and a splash of chocolate sauce Yum!
